Project Description

Sustain-a-bite is working to create innovative, affordable, and eco-friendly ways to produce plant-based ingredients and foods. The project’s goal is to make foods that are not only nutritious but also produced using less energy and water. In fact, the methods can cut energy use by over 30% and water use by more than 50%, compared to traditional processes used for plant-protein isolates.

Sustain-a-bite is aiming to lower the cost of plant-based foods by 25% compared to common meat and dairy products, making them more affordable for everyone. By using new bioprocessing techniques, the project is changing the way plant ingredients are processed, reducing waste and ensuring that the entire plant is used, not just the protein.

The project’s food prototypes will offer a wide variety of plant-based options, from liquids and semi-solids to solid foods. These will deliver a full range of nutrients like protein, fiber, vitamins, minerals, and antioxidants, going beyond just protein to provide balanced, healthy options.

Sustain-a-bite is also focused on keeping the natural benefits of plants through minimal processing, which can help with better digestion, improved satiety, and enhanced taste and texture. Finally, the project will evaluate how these processes impact overall nutrition, gut health, and sustainability to ensure the best possible results for consumers and the environment.
